The Bikini Cocktail

Serves 10 people

For the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Drink (produces 850ml, to serve 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

For the Cordial: Place all the items in a saucepan, heat until it reaches a gentle boil, stirring to dissolve. Next, turn off the burner allowing it to reach room temperature completely. Decant into a sterilised bottle, close it and store in the refrigerator, where it will keep for up to a month.

To make Cocktail Base: Mix all the liquids into a big jug, leave to sit for one hour, then filter it preferably using cheesecloth, so it's perfectly clear.

For serving: Add 85ml from the cocktail base into a mixing glass containing ice, and agitate carefully for a minute to chill. Pour into an chilled martini glass or equivalent, decorate with the cranberries and finish using a brief mist of mandarin oil above the glass.
